Spicy Bread Sandwich

Hello everyone,
Hope you all are doing well. I love Bengaluru's Cool Joint Sandwich and I was inspired to make a similar sandwich tonight for dinner. Here is my recipe:

Ingredients required:

Any Sandwich Bread
1/2 tsp butter
Garbanzo beans (soaked, cooked & mashed)
1 boiled and mashed potato
1/2 Finely chopped onion
1/2 Finely chopped tomato
2 pods of minced garlic
A small bunch of finely chopped cilantro
1 tsp of Mother's All in one chutney
1 tsp of lime juice
Grated Mozzarella cheese (as required)

Dry ingredients:
1/2 tsp of Chat Masala Powder
1/2 tsp of Turmeric
1/2 tsp of Kashmir chili powder
Salt to taste

Method: 

Take a pan and melt the butter. Add minced garlic & onion and toss for a minute. Add finely chopped tomato and cook for few minutes. Add mashed garbanzo beans, mashed potato and mix well. Allow it to cook for few mins. To this, add All in one chutney, lime juice and all the dry ingredients and mix well. In the end, add salt & garnish with cilantro. This would be your sandwich filling.

To Grill: 

Take a slice of bread and apply Mother's All in one chutney to the inside of the bread slice. Add the vegetable/sandwich filling and garnish with mozzarella cheese and cover it with another slice of bread. Apply a little bit of butter to the outer side of the sandwich and grill them to golden brown. Serve them hot. :)

Chutney option:

If you do not have Mother's All in One Chutney, you can make one at home. Here is the recipe I use:

Ingredients:

A small bunch of Cilantro
A small bunch of Mint
2 green chilies
2 pods of garlic
1-2 tsp of lime juice
Salt to taste

Grind the ingredients together to a fine paste with very little water. Chutney ready :)

Variation: 

You can also make a fresh Sandwich with the same chutney by using sliced cucumber, sliced tomato & a slice of cheese. Its a perfect sandwich for a warm summer day! Enjoy!
